He is the Head of Cheese at Rennet & Rind, a company that operates as both a cheese shop and an affinage laboratory, with its headquarters in Cambridge and a well-known retail boutique in Stamford.
His work consists of selecting cheeses from the finest independent British producers and maturing them within the company’s dedicated rooms until they reach their peak expression. He was the first person ever in the UK to receive the title of Affineur of the Year, a prestigious accolade he has since captured an impressive three times (2022, 2023, 2025). The vast majority of his extensive expertise was developed hands-on directly inside the maturing rooms, where he continues to spend his days.
He is a premier judge at the most important dairy competitions on the planet. Since 2018, he has been a permanent fixture at the World Cheese Awards, and in 2025, he had the honor of representing England on the elite global Super Jury in Bern. He is also a proud member of the Guilde Internationale des Fromagers.
