Renowned French master cheesemaker and affineur, awarded the prestigious title of Meilleur Ouvrier de France (MOF) in 2015 in the crémier-fromager category—one of the highest honors for artisanal excellence in France.
His career path is unconventional. A graduate of the EM Lyon Business School, he spent years working as an international sales director and corporate strategy consultant. At the age of 42, he decided to completely change his life to pursue his passion for cheese.
In 2010, he took over a historic business in Rambouillet, renaming it Tout un Fromage and equipping the shop with its own aging cellar
He is known for his playful and original approach to the industry. He co-founded the Ligue des Fromagers Extraordinaires and the Collectif Fromaginaire, aiming to promote cheese culture in unconventional ways
He wrote the Hachette illustrated encyclopedia Tout un fromage: L’encyclopédie calée et décalée du fromage, which received the award for best MOF book in 2025.
