Master cheesemaker and affineur, he is the founder of Fromageries Laurent Dubois, located in Paris’s most iconic neighborhoods and described by food enthusiasts as ‘cheese jewelry shops.

Coming from a family of historic dairy producers, he embarked on an extensive educational journey across the French countryside to personally select the finest small local producers. He is a fierce advocate for raw-milk cheese, believing it is the only way to authentically express the identity and terroir of its land of origin.

In 2000, he earned the title of Meilleur Ouvrier de France – Classe Fromager, the highest honor of excellence for a French master cheesemaker.

For more than 30 years, Dubois has focused on the selection, aging, and promotion of artisanal cheeses. Creator and promoter of the Cheese Biodiversity Foundation, he dedicates his ongoing commitment to safeguarding lands, traditional knowledge, and dairy diversity.”
